中文摘要: 为进一步探究低温真空慢煮(sous vide,SV)70 ℃处理10 min后的中华管鞭虾在不同贮藏温度(-18、4 ℃和25 ℃)下肌肉品质变化规律,并对其货架期进行预测,以SV去头去壳(虾仁组)与去头带壳(带壳虾组)中华管鞭虾为研究对象,分别测定其色差、pH值、水分含量、持水力、质量损失率、质构特性、菌落总数和挥发性盐基氮(total volatile basic nitrogen,TVB-N)含量,并以菌落总数建立Arrhenius方程预测其货架期。结果显示,随贮藏时间延长,在不同贮藏温度条件下,SV中华管鞭虾肌肉的b*值、pH值、菌落总数和TVB-N含量呈上升趋势,而L*值、a*值、水分含量和持水力呈下降趋势。在-18 ℃和4 ℃下,虾肌肉咀嚼性、弹性和剪切力呈先增加后减小的趋势,这些质构特性指标在25 ℃呈下降趋势。对于虾仁组和带壳虾组,在-18、4 ℃和25 ℃的实际货架期为300、18 d和2 d,预测货架期分别为323.19、18.91 d和1.86 d以及293.11、17.22 d和1.70 d;试验中所构模型相对误差约为10%,决定系数R2均超过0.90。在上述指标中,带壳虾组肌肉水分含量高、质量损失率低;虾仁组在pH值、持水力、菌落总数和TVB-N含量表现良好,且各指标变化程度相对较小。综上,经SV处理的虾仁组在-18 ℃的保鲜效果最好,基于菌落总数建立的货架期模型可为SV中华管鞭虾货架期的预测提供参考。
Abstract:To further investigate the changes in muscle quality of red shrimp (Solenocera crassicornis) after sous vide (SV) treatment at 70 ℃ for 10 min during storage at different temperatures (-18 ℃,4 ℃,and 25 ℃)and predict its shelf life,SV-treated decapitated and shelled shrimp(shrimp group) and decapitated shrimp with shell (shell group) were studied. The color difference,pH value,moisture content,water-holding capacity,mass loss rate,texture properties,aerobic plate count,and total volatile basic nitrogen (TVB-N) content were measured. The shelf life was predicted using the Arrhenius equation based on aerobic plate count. The results showed that with the extension of storage time,the b* value,pH value,aerobic plate count,and TVB-N content increased,while the L* value,a* value,moisture content,and water-holding capacity decreased under different temperature conditions. At -18 ℃ and 4 ℃,the chewiness,springiness,and shear force of shrimp muscle first increased and then decreased,while these texture properties decreased at 25 ℃. For the shrimp group and the shell group,the actual shelf lives at -18 ℃,4 ℃,and 25 ℃ were 300 d,18 d,and 2 d,respectively. The predicted shelf lives were 323.19 d,18.91 d,and 1.86 d for the shrimp group,and 293.11 d,17.22 d,and 1.70 d for the shell group. The relative error of the model constructed in the experiment was approximately 10%,and the coefficient of determination R2 exceeded 0.90. Among these indicators,the shell group showed higher muscle moisture content and lower mass loss rate,while the shrimp group exhibited better performance in pH value,water-holding capacity,aerobic plate count,and TVB-N content,with relatively smaller changes in each indicator. In summary,the SV-treated shrimp group showed the best preservation effect at -18 ℃. The shelf life model based on aerobic plate count can provide a reference for predicting the shelf life of SV-treated Solenocera crassicornis.
