中文摘要: 为探究不同复热方式对即热卤牛蹄食用品质及挥发性风味物质的影响,选择微波、汽蒸和水浴3种方式对其进行复热,以新鲜卤制牛蹄作为对照组,测定对照组和复热组的质构、剪切力、色泽、水分含量、复热损失率等食用品质指标及风味品质指标变化。结果表明,与对照组相比,汽蒸和水浴复热组的硬度、弹性、咀嚼性和内聚性均下降,剪切力显著降低(P<0.05),而胶黏性、L*值和a*值显著高于微波复热组(P<0.05)。此外微波、汽蒸、水浴复热组水分含量分别降低至56.64%、57.04%和57.40%,复热损失率分别为9.53%、5.58%和4.27%。结合电子鼻和挥发性风味物质分析以及感官评价的结果,即热卤牛蹄经复热后,其中石竹烯和D-柠檬烯等烷烯烃类物质种类和含量增加;肉豆蔻醛和十六醛等醛类相对含量显著提高(P<0.05);水浴复热组中酚类、杂环类和含硫化合物,如麦芽酚、2,5-二甲基吡嗪和5-甲硫基戊腈等阈值较低的挥发性风味物质占比较高。水浴复热的即热卤牛蹄总体可接受度分值较高,且相较于对照组和其他复热组在维持即热卤牛蹄食用和风味品质方面具有优势,因此水浴为即热卤牛蹄的最佳复热方式。
Abstract:This study investigated the effects of three reheating methods (microwave, steaming, and water bath) on the edible quality and volatile flavor compounds of ready-to-heat braised cattle hoof products, using freshly prepared braised cattle hoof samples as a control. The changes in edible quality indicators such as texture, shear force, color, moisture content, and reheating loss rate, as well as flavor quality indicators, were determined for the control group and the reheating group. Results revealed that the hardness, elasticity, chewiness, and cohesiveness of the steamed and water-bathed groups were decreased, with a significant reduction in shear force (P<0.05), while adhesiveness, L*, and a* values were significantly higher than those of the microwave group (P<0.05) compared to the control group. Additionally, the moisture content of all reheated groups was reduced to 56.64%, 57.04%, and 57.40%, respectively, with reheating loss rates of 9.53%,5.58%, and 4.27%. The results of the electronic nose and volatile flavor compounds, along with sensory evaluation, revealed an increase in the variety and content of alkene compounds such as caryophyllene and D-limonene after reheating. The relative content of aldehydes, such as myristic aldehyde and hexadecanal, was significantly increased (P<0.05); in the water-bathed group, volatile flavor compounds involving phenolic, heterocyclic, and sulfur-containing compounds with lower thresholds, such as maltol, 2,5-dimethylpyrazine,and 5-methylthiohexanenitrile, were relatively more abundant. The overall acceptability score of the waterbathed braised cattle hoof was relatively high. Compared with the control group and other reheating groups, the water bath had advantages in maintaining the edible quality and flavor quality of the braised cattle hoof. Therefore, a water bath is the best reheating method for ready-to-heat braised cattle hooves.
