真空低温慢煮工艺对赤道鱿鱼品质特性的影响

中文摘要: 为探究真空低温慢煮(sous vide,SV)技术对赤道鱿鱼(Ommastrephes bartramii)品质特性的影响,在不同煮制温度(65、70、75、80 ℃)、不同煮制时间(60、90、120、150 min)下进行SV加工,并对其感官、色差、水分含量、蒸煮损失率、持水力、pH值、质构特性、肌原纤维蛋白浓度以及苏木精-伊红(hematoxylin-eosin,HE)染色等指标进行综合评价。结果表明,随着煮制温度的升高和煮制时间的延长,赤道鱿鱼的感官评分呈先上升后下降的趋势,在SV工艺为煮制温度75 ℃、煮制时间120 min时,赤道鱿鱼的感官评分最高。在相同蒸煮时间内,赤道鱿鱼L*值、a*值随煮制温度的提高呈先上升后下降的趋势,75 ℃时L*值达到最大;65~75 ℃时,延长煮制时间,赤道鱿鱼持水力升高,pH值明显提升,肌原纤维蛋白浓度降低;煮制温度大于75 ℃时,相同煮制时间,随煮制温度升高,赤道鱿鱼弹性、咀嚼性降低;75~80 ℃时,延长煮制时间,赤道鱿鱼持水力明显降低;当煮制温度升高至80 ℃时,SV赤道鱿鱼蒸煮损失率明显升高;HE染色观察表明,随煮制温度升高,赤道鱿鱼肌纤维断裂且间隙增大凝结成团,水分流失严重。综上,75 ℃真空煮制120 min,可有效减少赤道鱿鱼水分的损失,提高赤道鱿鱼感官品质,延缓赤道鱿鱼质构的变化。SV工艺在保留赤道鱿鱼肉质和风味上具有优势。
Abstract:The effects of sous vide (SV) on the quality characteristics of Ommastrephes bartramii were investigated. SV processing was carried out at different temperatures (65, 70, 75, 80 ℃) and for different time periods (60, 90, 120, and 150 min). The sensory quality, color difference, moisture content, cooking loss rate,water holding capacity, pH value, textural properties, myofibrillar protein concentration, and hematoxylin-eosin (HE) staining were assessed for the products. The results indicated that with the increases in cooking temperature and time period, the sensory scores of O. bartramii showed an initial increase followed by a decrease,being the highest after SV processing at 75 ℃ for 120 min. Within the same cooking time period, the L* and a* values of O. bartramii showed a trend of first increasing and then decreasing as the cooking temperature rose, and the L* value reached the maximum at 75 ℃. O. bartramii cooked between 65 ℃ and 75 ℃ showed an increase in the water-holding capacity, a significant increase in the pH value, and a decrease in the myofibrillar protein concentration as the cooking time extended. When the temperature was greater than 75 ℃, within the same cooking time period, the elasticity and chewiness of O. bartramii decreased as the temperature rose .The water holding capacity of O. bartramii cooked between 75 ℃ and 80 ℃ decreased as the cooking time extended (P<0.05). When the temperature rose to 80 ℃, the cooking loss rate of SV increased . HE staining results indicated that as the cooking temperature rose, muscle fibers became fractured, with increased gaps,and coagulated clusters were formed, leading to severe moisture losses. In summary, SV at 75 ℃ for 120 min effectively reduced the moisture loss, improved the sensory quality, and delayed the textural changes of O.bartramii. The SV process has significant advantages in retaining the texture and flavor of O. bartramii.
