不同酒龄红曲酒的抗氧化活性分析

中文摘要: 以红曲酒为研究对象,研究不同酒龄对其活性成分和抗氧化能力的影响及其相关性。采用紫外分光光度法检测不同酒龄红曲酒的色价、总酚和总黄酮含量,以总抗氧化能力、羟自由基清除能力、DPPH自由基清除率、超氧化物歧化酶活性评价红曲酒的抗氧化能力。结果表明:20年红曲酒的色价最高;随着酒龄的增加,红曲酒的总酚和总黄酮含量变化趋势不同,其中15年红曲酒的总酚含量最高,而8年的总黄酮含量最高。在不同酒龄红曲酒中,20年的抗氧化能力总体效果最好。相关性分析结果表明,色价与总抗氧化能力和DPPH自由基清除率具有极显著相关性(P<0.01);总黄酮含量与DPPH自由基清除率和超氧化物歧化酶活性具有极显著相关性(P<0.01);总酚含量与超氧化物歧化酶活性无显著相关性(P>0.05),与其他3项抗氧化能力指标呈负相关。

Abstract:This study investigates the effects of different wine ages of Hongqu rice wine on its active components and antioxidant capacity,as well as their correlation analysis. UV spectrophotometry was used to detect the color value,total phenol content,and total flavonoid content of Hongqu rice wine with different ages. The antioxidant capacity of Hongqu rice wine was evaluated based on total antioxidant capacity,hydroxyl radical scavenging ability,DPPH radical scavenging ability,and superoxide dismutase(SOD)activity.The results indicated that the 20-year-old Hongqu rice wine had the highest color value. With the increase in wine age,the trends in total phenol and total flavonoid content varied. The total phenol content was highest in the 15-yearold sample,while the total flavonoid content peaked in the 8-year-old sample. Among Hongqu rice wine with different ages,the 20-year-old Hongqu rice wine exhibited the best overall antioxidant capacity,which was comparable to that of vitamin C solution(100 μg/mL). Correlation analysis revealed that the color value was extremely significantly correlated(P<0.01)with total antioxidant capacity and DPPH radical scavenging ability.Total flavonoid content showed an extremely significant correlation(P<0.01)with both DPPH radical scavenging ability and SOD activity.There was no significant correlation between total phenol content and SOD activity(P>0.05),while negative correlations were observed with three other antioxodant capacity indicators.
