中文摘要: 为提高益生菌存活率,以海藻酸钠和壳聚糖为壁材,采用挤压法制作嗜酸乳杆菌微胶囊,并对微胶囊形态、包埋率、热稳定性、机械强度及对胃肠道的耐受性进行评价。结果表明,制备的微胶囊呈白色球形,包埋率为84.7%,粒径为2.5 mm,具有良好的机械强度。经热处理后微胶囊包埋嗜酸乳杆菌的存活率为85.3%,比游离菌提高14.5%。在胃肠道模拟试验中,包埋菌株均表现更好的存活能力。
Abstract:To improve the survival rate of probiotics,Lactobacillus acidophilus microcapsules were produced by extrusion method with sodium alginate and chitosan as wall materials. The prepared microcapsules were characterized in terms of the morphology,encapsulation efficiency,thermal stability,mechanical strength,and tolerance to gastrointestinal tract. The results demonstrated that the prepared microcapsules were white spheres,with the encapsulation efficiency of 84.7%,a particle size of 2.5 mm,and good mechanical strength.The survival rate of encapsulated L.acidophilus after heating was 85.3%,which was 14.5% higher than that of the free cells.In the simulated gastrointestinal tract,the encapsulated L.acidophilus showed better survivability.
