广东17个品种冬瓜品质分析及加工适宜性评价

中文摘要: 为探究不同冬瓜品种间品质差异、筛选具有加工适宜性的冬瓜品种,该文针对17个广东冬瓜品种,从理化指标、抗氧化能力、质构指标、色泽指标和风味成分5个维度共21个指标开展品质分析;运用主成分分析法结合冬瓜液态和固态产品加工特点,分别构建冬瓜液态和固态产品加工适宜性评价模型。结果表明,不同品种冬瓜的品质差异主要体现在糖酸比、DPPH自由基清除率、硬度、a*值和萜类、含硫化合物含量,其变异系数分别为0.42、0.41、0.29、0.61和0.25。适宜加工为液态产品的前3个冬瓜品种是利农黑桔小冬瓜(A11)、利农黑小胖冬瓜(A12)、利农2号香芋粉皮冬瓜(A13),其中A11的综合表现最佳,其可溶性固形物含量为4.60%,多酚含量为3.32 mg GAE/g,出汁率为75.33%,具有出汁率高、营养价值高的特点;适宜加工为固态产品的前3个冬瓜品种是华玉(A16)、利农黑桔小冬瓜(A11)、利农黑小胖冬瓜(A12),其中A16的综合表现最佳,其硬度为521.41 g,咀嚼性为986.73 g·s,粗纤维含量为0.56 g/100 g,具有良好的组织结构和加工特性。
Abstract:This study investigated quality variations among different wax gourd varieties and screened cultivars suitable for processing by conducting comprehensive quality assessments on 17 wax gourd varieties from Guangdong Province through 21 indices across five dimensions:physicochemical properties,antioxidant capacity,textural characteristics,chromatic parameters,and flavor components. By using the principal component analysis method,combined with the processing characteristics of liquid and solid wax gourd products,the evaluation models for the processing suitability of liquid and solid wax gourd products were respectively constructed. The results indicated that the quality differences of different wax gourd varieties were mainly reflected in the sugar-acid ratio,DPPH radical scavenging rate,hardness,a*value,and terpenoids,sulfocompound contents with variation coefficients of 0.42,0.41,0.29,0.61 and 0.25,respectively.The top three wax gourd varieties suitable for processing into liquid products are Linong Black,Orange,and Small Wax Gourd(A11),Linong Black,Small,and Fat Wax Gourd(A12),and Linong No. 2 Taro Pink Skin Wax Gourd(A13). Among them,A11 had the best comprehensive performance,with a soluble solid content of 4.60%,a polyphenol content of 3.32 mg GAE/g,and a juice yield of 75.33%.It featured high juice yield and high nutritional value. The top three wax gourd varieties suitable for processing into solid products are Huayu(A16),A11,and A12. Among them,A16 had the best comprehensive performance with a hardness of 521.41 g,chewability of 986.73 g·s,and crude fiber content of 0.56 g/100 g.It had good tissue structure and processing characteristics.
