中文摘要: 该研究利用蛋白酶(碱性蛋白酶、复合蛋白酶、中性蛋白酶)处理面筋蛋白,并将其添加到面条中,系统评估改性面筋蛋白对面条吸水率、干物质损失率、质构特性、色泽和感官特性的影响。结果表明,酶法改性的面筋蛋白对面条的吸水率和干物质损失率具有一定影响,其中,碱性蛋白酶对二者的影响最显著(p<0.05);同时,酶法改性的面筋蛋白提高面条的黏附性、硬度、弹性、回复性,改善面条的感官特性,尤其是碱性蛋白酶处理组表现最佳。然而,中性蛋白酶处理面筋蛋白对面条的亮度存在负面影响。总之,经蛋白酶处理的面筋蛋白在品质特性方面产生积极作用,酶法改性的面筋蛋白有望应用于面条的生产。
Abstract:In this study,proteases(alkaline protease,complex protease,and neutral protease)were used to treat gluten and add it to noodles. The effects of modified gluten on water absorption,dry matter loss,texture properties,color,and sensory properties of noodles were systematically evaluated. The results showed that modified gluten by enzymatic hydrolysis had certain effects on water absorption and dry matter loss of noodles,and the effect of alkaline protease was the most significant(p<0.05). At the same time,the adhesiveness,hardness,elasticity,and resilience of noodles were improved by the modified gluten protein,and the sensory properties of noodles were improved,especially in the alkaline protease treatment group. However,neutral protease treatment of gluten had a negative effect on the brightness of noodles. In conclusion,protease-treated gluten had a positive effect on the quality characteristics,and modified gluten by enzymatic hydrolysis is expected to be used in the production of noodles.
