中文摘要: 为改善传统工艺制作的大果山楂果脯的酸涩和粗糙的纤维感,以大果山楂为原料,结合漂烫脱涩和纤维素酶酶解去纤维工艺制作大果山楂果脯。以感官评分和质构特性(硬度、弹性、咀嚼性、内聚性)为指标,考察漂烫温度、漂烫时间、纤维素酶添加量和纤维素酶酶解时间4 个单因素对果脯感官品质的影响,并进行正交试验,同时测定产品的理化指标和微生物指标。试验结果表明,基于漂烫和纤维素酶酶解改善大果山楂果脯口感及品质的最佳工艺条件为漂烫温度90 ℃、漂烫时间25 min、纤维素酶添加量0.3%、纤维素酶酶解时间2 h。该条件下的果脯成品在感官上颜色淡黄鲜亮,肉质紧实饱满,且其理化指标和微生物指标经过重复性检测,结果均符合国家标准规定。
Abstract:The preserved hawthorn [Malus domeri (Bois) Chev.] fruits produced by the conventional method had an acid and astringent taste and a coarse fiber feeling. A novel product was developed with M. domeri fruits as raw materials by a process combining blanching for de-astringency and cellulase hydrolysis for defibration.With sensory scores and textural properties(hardness,elasticity,chewiness,and cohesion) as indicators,the effects of blanching temperature,blanching time,cellulase addition,and cellulase hydrolysis time on the sensory quality of preserved hawthorn fruits were investigated. An orthogonal design was adopted to optimize the process. The physicochemical and microbial indexes of the product were determined. The results showed that the optimal processing conditions for improving the taste and quality of preserved hawthorn fruits were as follows:blanching at 90 ℃ for 25 min and hydrolysis with 0.3% cellulase for 2 h. The product obtained under the optimum conditions had a light yellow and bright color,firm and plump flesh,and physicochemical and microbiological indicators in line with the relevant requirements of national standards.
