中文摘要: 以新鲜牛乳和红曲为原料,研制红曲奶疙瘩。以感官评分为评价依据,在单因素试验的基础上采用响应面试验优化红曲奶疙瘩的加工工艺。试验结果表明红曲奶疙瘩的最优工艺参数为红曲添加量0.15 g/L、发酵剂添加量3 g/L、氯化钙添加量0.15 g/L、凝乳酶添加量0.16 g/L。在此工艺条件下制作的红曲奶疙瘩,颜色呈现淡粉色,奶味浓郁,质地细腻,软硬适中,每100 g 中含蛋白质23.0 g、脂肪21.0 g、钙792 mg。对红曲奶疙瘩和不添加红曲制作的奶疙瘩的抗氧化性进行比较,结果表明红曲奶疙瘩的DPPH 自由基清除率和羟自由基清除率分别为35.0%和36.5%,均高于未添加红曲的奶疙瘩。
Abstract:Monascus cheese was prepared with fresh milk and monascus as raw materials. Taking sensory evaluation as the evaluation criterion,the processing technology of monascus cheese was optimized through a response surface experiment following single‐factor test. The experimental results showed that the optimal pro‐cessing parameters for monascus cheese were as follows:monascus addition of 0.15 g/L,starter culture addition of 3 g/L,calcium chloride addition of 0.15 g/L,and rennet addition of 0.16 g/L.Under these conditions,the pro‐duced monascus cheese exhibited a light pink color,a rich milky flavor,a delicate texture,and a moderate firm‐ness,and contained 23.0 g of protein,21.0 g of fat,and 792 mg of calcium per 100 g. In terms of antioxidant properties,cheese with monascus exhibited a DPPH radical scavenging rate of 35.0% and a hydroxyl radical scavenging rate of 36.5%,both of which were higher than those of cheese without monascus.
