中文摘要: 近年来,由于环境污染,人口增长,资源紧缺等问题,安全、营养、可持续的食品供给面临着较大的挑战。以科技手段赋能食品行业,拓宽食品边界,将更多生产场景引入食品领域,成为“新食品”开发的关键推动力。合成生物技术的发展能解决食品领域中的诸多难题,如减少传统养殖业带来的环境资源压力、提高农业生产效率、实现食品工业迭代升级等。该文详细介绍合成生物技术在新食品类型的研发与创新、改善食品营养、食品包装材料、食品添加剂等领域的应用,以期对未来新食品行业的创新发展提供新的启示。
Abstract:In recent years, the supply of safe, nutritious and sustainable food has faced great challenges due to environmental pollution, population growth and resource constraints. The new technologies have become the key driving forces for empowering the food industry, broadening the boundaries of the food industry, and introducing more production scenarios into the food sector. The development of synthetic biotechnology can solve various challenges in the food industry, such as reducing the environmental pressure by traditional farming,improving agricultural production efficiency, and realizing the iterative upgrading of the food industry. In this paper, the applications of synthetic biotechnology in research and innovation of new food tapes, food nutrition improvement, food packaging materials, food additives and other fields are described in detail, with a view to providing new insights into the future innovation and development of the new food industry.
