中文摘要: 以低筋面粉、青稞粉、亚麻籽蛋白、木糖醇等为原料制作亚麻籽蛋白青稞饼干。通过感官评价优化饼干配方,并测定饼干的质构特性、理化指标、微生物指标、风味物质及微观结构。结果表明,亚麻籽蛋白青稞饼干的最优配方:低筋面粉70 g、青稞粉添加量30 g、亚麻籽蛋白添加量6 g、木糖醇添加量12 g,在此配方下饼干的感官评分最高;亚麻籽蛋白的添加提升了青稞饼干的蛋白质和脂肪含量,其饼干的硬度为19.39 N;亚麻籽蛋白赋予青稞饼干良好的风味,醇类和醛类相对含量较高为33.92%、28.18%;扫描电子显微镜观察发现添加亚麻籽蛋白的饼干结构更紧密;微生物检出量均符合国家标准,分别为大肠菌群2 CFU/g、菌落总数37 CFU/g、霉菌3 CFU/g。综合上述,亚麻籽蛋白的添加对青稞饼干的品质具有积极影响。
Abstract:Flaxseed protein highland barley biscuits were made from low-gluten flour, highland barley flour,flaxseed protein, xylitol, etc. The biscuit formula was optimized by sensory evaluation. The texture characteristics, physical and chemical indexes, microbial indexes, flavor substances, and microstructure of biscuits were determined. The results showed that the optimal formula of flaxseed protein highland barley biscuits consisted of 70 g of low-gluten flour, 30 g of highland barley flour, 6 g of flaxseed protein, and 12 g of xylitol,where the sensory score of the biscuits reached the highest. The addition of flaxseed protein increased the protein and fat content of highland barley biscuits, and the hardness of the biscuits was 19.39 N. Flaxseed protein improved the flavor of highland barley biscuits, and the relatively high contents of alcohols and aldehydes were 33.92% and 28.18%, respectively. Scanning electron microscopy showed that the biscuits with flaxseed protein were more compact. The detected amount of microorganisms met the national standards, with 2 CFU/g of Escherichia coli, 37 CFU/g of total bacterial count, and 3 CFU/g of mold. In summary, the addition of flaxseed protein has a positive impact on the quality of highland barley biscuits.
