中文摘要: 为研究常见果皮中游离酚、酯溶性酚和难溶性酚的含量及抗氧化活性情况,以11 种果皮为原料提取其中的游离酚、酯溶性酚和难溶性酚,测定11 种果皮的铁离子抗氧化能力(ferric ion reducing antioxidant power,FRAP)、DPPH 自由基清除能力、ABTS+自由基清除能力、总多酚含量,使用超高效液相色谱(ultra performance liquid chromatography,UPLC)仪对果皮提取物中的多酚进行定性和定量分析。结果表明,11 种果皮中游离酚含量为2.69~20.09 mg GAE/g DW,酯溶性酚含量为2.26~6.38 mg GAE/g DW,难溶性酚含量为0.72~13.41 mg GAE/g DW,总酚含量为9.03~27.88 mg GAE/g DW;游离酚、酯溶性酚以及难溶性酚的ABTS+自由基清除能力分别为29.03~273.48、29.97~144.91、36.65~195.03 μmol Trolox/g DW,DPPH 自由基清除能力分别为9.80~114.13、28.39~55.96、6.55~46.36 μmol Trolox/g DW,FRAP 分别为5.74~87.71、0.81~48.14、0.84~38.14 μmol Trolox/g DW。没食子酸、对香豆酸、芦丁、异槲皮苷、槲皮苷等广泛存在于11 种果皮中。综上,龙眼的多酚含量较高,抗氧化能力较强,是良好的抗氧化剂来源。
Abstract:To investigate the content and antioxidant capacity of free,esterified,and insoluble-bound phenolics in common fruit peels,this paper employed 11 types of fruit peels as the materials to extract free,esterified,and insoluble-bound phenolics from them. Meanwhile,the ferric ion reducing antioxidant power (FRAP),DPPH free radical scavenging power,ABTS+ free radical scavenging power,and total phenolic content of the fruit peels were determined. Additionally,qualitative and quantitative analyses were conducted on the phenolics in peel extracts by ultra-high performance liquid chromatography (UPLC). The results showed that the free phenolic content in 11 types of fruit peels was 2.69-20.09 mg GAE/g DW;the esterified phenolic content was 2.26-6.38 mg GAE/g DW;the insoluble-bound phenolic content was 0.72-13.41 mg GAE/g DW;the total phenolic content was 9.03-27.88 mg GAE/g DW. The ABTS+ free radical scavenging power of free,esterified and insoluble-bound phenolics was 29.03-273.48,29.97-144.91,and 36.65-195.03 μmol Trolox/g DW respectively. The DPPH free radical scavenging power was 9.80-114.13,28.39-55.96,and 6.55-46.36 μmol Trolox/g DW respectively,with the FRAP of 5.74-87.71,0.81-48.14,and 0.84-38.14 μmol Trolox/g DW respectively. Gallic acid,coumaric acid,rutin,isoquercitrin,quercitrin,and other compounds were common in the 11 types of fruit peels. In summary,Dimocarpus longgan Lour. had a relatively high phenolic content and strong antioxidant activity,serving as a sound source of antioxidants.
