中文摘要: 玫瑰果是玫瑰花凋谢后由花托发育而成的肉质假果,具有保健功能及药用价值。该研究选取3 个特色品种(防川三号、紫枝、香水)玫瑰果,对其基本营养成分、矿物质元素、氨基酸组分、糖组分、有机酸、膳食纤维和活性物质等指标进行测定与分析,并通过主成分分析对3 个品种做出综合评价。结果表明,玫瑰果脂肪含量低(0.19~0.69 g/100 g)、蛋白质含量高(1.28~3.14 g/100 g)、氨基酸组成较为全面、钾(405.00~486.00 mg/100 g)、钙(79.40~260.00 mg/100 g)、膳食纤维(5~12 g/100 g)含量较高,可作为良好的营养补充来源;糖分主要由果糖和葡萄糖组成;有机酸含量高,主要为柠檬酸;糖酸比为3~4;还富含叶酸、α-生育酚、β-胡萝卜素、核黄素、抗坏血酸等对机体十分有益的活性成分。主成分分析结果表明,对主成分贡献率最高的指标主要有赖氨酸、缬氨酸、果糖、核黄素、铁元素、维生素E、精氨酸及总膳食纤维等;3 个不同品种的玫瑰果营养品质综合得分由高到低依次为香水、紫枝、防川三号。
Abstract:Rosehip is fleshy pseudocarp developed from receptacles of faded roses,which has health function and medicinal value. Three rosehip cultivars named Rosa rugosa Thunb. Jilin,R. rugosa Zizhi,and R. centifolia Xiangshui were measured for basic nutritional components,mineral elements,amino acid composition,sugars,organic acids,dietary fiber,and active substances. A principal component analysis (PCA) was conducted to comprehensively evaluate the three cultivars. The results showed that rosehip could be a good source of nutrition,characterized by low fat (0.19-0.69 g/100 g),high protein (1.28-3.14 g/100 g),comprehensive amino acid composition,and high content of potassium (405.00-486.00 mg/100 g),calcium (79.40-260.00 mg/100 g),and dietary fiber(5-12 g/100 g). Its sugars are mainly composed of fructose and glucose. It has high content of organic acids,mainly citric acid,with a sugar-to-acid ratio of 3-4. It is also rich in folic acid,α-tocopherol,β-carotene,riboflavin,ascorbic acid,and other active substances that are highly beneficial to human body. The PCA results indicated that the indicators contributing most to the principal components were primarily lysine,valine,fructose,riboflavin,iron,vitamin E,arginine,and total dietary fiber. The comprehensive nutritional quality scores of the three rosehip cultivars were in descending order of R. centifolia Xiangshui,R. rugosa Zizhi,and R. rugosa Thunb. Jilin.
