中文摘要: 为探究不同原料全豆豆浆的品质差异,分别以黄豆、黑豆和青豆为原料制备全豆豆浆,对其感官品质、主要营养成分、活性物质和抗营养因子含量进行对比分析。结果表明:感官品质方面,黄豆豆浆显著优于黑豆豆浆和青豆豆浆(P<0.05);3 种全豆豆浆中蛋白质、脂肪、钙、铁、锌、维生素B2 和维生素E 等营养成分含量的差异主要表现在不饱和脂肪酸,其中,黄豆豆浆中两种人体必需脂肪酸(亚油酸和α-亚麻酸)的总量最高,黑豆豆浆次之,青豆豆浆最低,均有显著差异(P<0.05);3 种全豆豆浆脲酶活性均为阴性,但其他活性物质和抗营养因子含量均有所不同,其中,青豆豆浆其他活性物质和抗营养因子含量均较低,黄豆豆浆与黑豆豆浆相比,大豆低聚糖含量高(P<0.05),磷脂和植酸含量低(P<0.05),总膳食纤维和皂苷含量二者无显著差异(P>0.05)。综上,3 种不同原料全豆豆浆中,黄豆豆浆综合品质最优,其次是黑豆豆浆,青豆豆浆略差。
Abstract:To explore the quality differences of whole soybean milk made from different raw materials, whole soybean milk was prepared from soybeans, black soybeans, and green soybeans, respectively. Their sensory qualities, nutrient composition, active substances, and antinutritional factors were compared and analyzed.The results showed that the sensory quality of soybean milk was significantly better than that of black soybean milk and green soybean milk (P<0.05). The differences in the nutrient composition such as protein, fat, calcium, iron, zinc, vitamin B2, and vitamin E in the three types of whole soybean milk were mainly reflected in unsaturated fatty acids. Among them, the total amount of two essential fatty acids(linoleic acid and α-linolenic acid) in soybean milk was the highest, followed by black soybean milk, and the lowest in green soybean milk(P<0.05). The urease activity of all three kinds of whole soybean milk was negative, but the content of other active substances and anti-nutritional factors was different. Specifically, green soybean milk had lower levels of other active substances and antinutritional factors. Compared to black soybean milk, yellow soybean milk exhibited a higher content of soybean oligosaccharides (P<0.05) and lower levels of phospholipids and phytic acid (P<0.05). There was no significant difference in the content of total dietary fiber and saponins between soybean milk and black soybean milk(P>0.05). In summary, among the three types of whole soybean milk, soybean milk had the best comprehensive quality, followed by black soybean milk, with green soybean milk being slightly inferior.
