中文摘要: 通过研究8 个不同品种(澳湖羊、策勒黑羊、杜泊羊、多郎羊、哈萨克羊、寒羊、和田羊及湖羊)及不同性别的羊肉品质特性,探究羊肉品质特性与外在因素及内在理化指标的关联性。对8 种不同的冷冻羔羊肉后腿部位进行理化指标、矿物质及氨基酸含量测定。肉品质常规指标测定发现,公羊的背脂厚度明显低于母羊,而杜泊羊的背脂厚度较为突出,为11.33 mm,但其后腿肉脂肪含量较低,仅为2.58%。矿物质含量测定结果表明,杜泊羊肉的铁含量最高,为24.37 mg/kg;策勒黑羊肉的锌含量最高,为40.53 mg/kg;多郎羊肉的镁含量最高,为412.67 mg/kg;而钙含量及铜含量在以上8 种羊肉中并无明显差异。氨基酸含量测定发现,公羊肉中氨基酸总量略优于母羊,而哈萨克羊肉的氨基酸含量明显优于其余品种,风味突出。

Abstract:In this study,meat quality characteristics of eight different breeds and genders of Aohu,Cele Black,Dorper,Duolang,Kazakh,Han,Hotan,and Hu Sheep were analyzed to explore the correlation between mutton quality characteristics and external factors as well as internal physicochemical indicators. Physical properties,minerals,and amino acid content of 8 different types of frozen hind leg meats were determined.It was found in routine index determination of meat quality that the thickness of back fat in male sheep was significantly lower than that in female sheep,while the thickness of back fat in Dorper sheep was more prominent,at 11.33 mm.However,the fat content in the hind leg meat was relatively low,only 2.58%. The mineral content determination found that iron content in Dorper lamb was the highest,at 24.37 mg/kg. The zinc content in Cele black lamb was the highest,at 40.53 mg/kg.The magnesium content in Duolang lamb was the highest,at 412.67 mg/kg.However,there was no significant difference in calcium and copper content among the eight types of lambs mentioned above. Amino acid content determination found that amino acid content in male sheep meat was slightly higher than that in female sheep,while the amino acid content in Kazakh sheep meat was significantly higher than that in other varieties,with a prominent flavor.
