中文摘要: 低聚肽是指一种相对分子质量小于1 000 Da 的生物活性肽。相比于多肽,低聚肽易吸收,且具有良好的生物活性。动物源低聚肽是食源性低聚肽的重要来源之一,不仅具有抗氧化、降血糖、降血压等活性,且安全性较高。该文主要综述近几年动物源低聚肽的制备方法及其抗氧化活性机理,并概括现阶段关于动物源低聚肽研究中所存在的不足,以期为我国后续动物源低聚肽的研究提供一定的理论基础。
Abstract:Oligopeptides refer to a class of bioactive peptides with a relative molecular weight of less than 1 000 Da. Compared to peptides,oligopeptides are easily absorbed and exhibit significant biological activity.Animal-derived oligopeptides are one of the key sources of food-derived oligopeptides,not only possessing activities such as antioxidant,hypoglycemic,and blood pressure lowering but also exhibiting a high level of safety. This study mainly reviewed the preparation methods and antioxidant activity mechanisms of animal-derived oligopeptides in recent years and summarized the current deficiencies in the research on animal-derived oligopeptides to provide a theoretical basis for future research on animal-derived oligopeptides in China.
