中文摘要: 植物精油作为一种天然抑菌剂,具有抑菌广谱、生物降解及安全无毒等特点,广泛应用于果蔬保鲜。由于植物精油复合膜优良的抑菌性能、阻隔性能及保鲜效果,避免单一植物精油在果蔬保鲜应用中的局限,成为果蔬包装的重要材料。该文介绍植物精油的抗菌机理及果蔬保鲜应用,着重综述植物精油-蛋白复合膜、植物精油-脂质复合膜、植物精油-多糖复合膜在果蔬保鲜领域的研究进展,总结植物精油复合膜研究所存在的问题,并对其果蔬保鲜应用展望。

Abstract:As a natural antibacterial agent, plant essential oil has the characteristics of broad-spectrum antibacterial, biodegradable and safe non-toxic, which is widely used in fruits and vegetables preservation. Due to the excellent antibacterial, barrier and preservation properties of composite films incorporating plant essential oil, it avoids the limitation of single plant essential oil in fruits and vegetables preservation and becomes an important packaging material for fruits and vegetables. In this paper, the antimicrobial mechanism of plant essential oil and application in fruits and vegetables preservation are summarized. The research progress of plant essential oil-protein composite films, plant essential oil-lipid composite films and plant essential oil-polysaccharide composite films in the fruits and vegetables preservation are reviewed. Moreover, the problems of the composite films containing plant essential oil, and future studies about the application in the fruits and vegetables preservation are discussed.
