不同浓缩方法枸杞膏美拉德反应产物及其体外活性对比

中文摘要: 该文以中宁枸杞为原料,对比分析真空浓缩、常压浓缩所制备枸杞膏的美拉德反应产物、活性物质、色差等指标,并对枸杞膏的多种功能特性进行综合评估。结果表明,常压浓缩法制备的枸杞膏色泽更深,其中5-羟甲基糠醛(5-hydroxymethyl furfural,5-HMF)含量、类黑精含量、多酚含量、黄酮含量分别为(1 516.42±11.88) μg/mL、163.77±11.35、(28.23±3.40) mg/mL、(623.45±4.39) μg/mL,对比真空浓缩法分别提高351.64%、104.13%、12.69%、48.95%。同时,通过对功能特性的研究,发现枸杞膏具有良好的抗氧化、降血糖、降血脂、降尿酸、美白性能,其中常压浓缩法制备的枸杞膏功效更好。

Abstract:Zhongning?Lycium?barbarum?was taken as the raw material,and the Maillard reaction products of?Lycium?barbarum?paste prepared by vacuum concentration and atmospheric pressure concentration,active substances,color difference,and other indicators were compared. In addition,the multiple functional properties of?Lycium?barbarum?paste were comprehensively assessed. The results showed that the?Lycium?barbarum?paste prepared by the atmospheric pressure method was darker in color,and the contents of the 5-HMF,melanoidins,polyphenols,and flavonoids were (1 516.42±11.88) μg/mL,(163.77±11.35),(28.23±3.40) mg/mL,and (623.45±4.39) μg/mL,respectively,which were 351.64%,104.13%,12.69%,and 48.95% higher than those by the vacuum concentration method. Meanwhile,through the study of functional properties,it was found that the?Lycium?barbarum?paste had good antioxidant,hypoglycemic,hypolipidemic,uric acid lowering,and whitening properties,among which the efficacy of the?Lycium?barbarum?paste prepared by the atmospheric pressure method was better.
