中文摘要: 发酵食品是由微生物参与发酵进而改变食品风味以及营养成分的一类食品。微生物代谢组学作为代谢组学研究的重要领域,在分析发酵食品风味、筛选发酵食品菌种、监控发酵过程等方面发挥重要优势。该文综述微生物代谢组学的研究过程,总结微生物代谢组学技术在不同发酵食品中的应用,为进一步揭示发酵食品发酵原理,提高发酵食品品质、优化发酵工艺等研究提供新方法和新思路。
Abstract:Fermented foods are a class of foods in which microorganisms participate in fermentation,thereby altering the flavor and nutritional components of foods.As an important field of metabolomics research,microbial metabolomics plays a significant role in analyzing the flavor of fermented foods,screening strains for fermented foods,and monitoring the fermentation process.This paper reviewed the research process of microbial metabolomics,summarized the application of microbial metabolomics technology in different fermented foods,and provided new methods and ideas for further revealing the fermentation principles of fermented foods,improving the quality of fermented foods,and optimizing fermentation processes.
