富硒农产品中硒与镉互作影响研究进展

中文摘要: 硒是人体必需微量元素之一,缺硒会导致大骨节病、克山病、免疫功能低下等健康问题。目前我国居民普遍存在缺硒现象,食用富硒农产品是目前公认的最安全、最有效、最科学的人体硒补充方法。然而,许多研究发现,在富硒农产品生产过程中,硒与重金属镉存在一定的互作关系,易出现镉含量超标问题,带来了农产品食用安全风险,极大地限制富硒农业的发展。因此,该文结合近年研究成果,对富硒农产品中硒镉检测方法进行阐释,介绍富硒农产品积累硒与镉的相互影响、硒镉互作机制中的伴生机制以及硒对重金属镉的抑制机制,以期为日后更深入研究硒镉互作关系提供参考,为研究农产品富硒降镉技术提供一定理论依据。

Abstract:Selenium is one of the essential trace elements for the human body,and selenium deficiency can lead to Kachin-Beck disease,Keshan disease,weakened immune function and other health problems. At present,there is a widespread phenomenon of selenium deficiency among the Chinese population.The consumption of selenium-rich agricultural products is recognized as the safest,most effective and most scientific method to supplement selenium in the human body. However,many studies have unveiled a mutual interaction between selenium and cadmium in the production process of selenium-rich agricultural products. Moreover,cadmium content is prone to exceed the standard,posing significant food safety risks and considerably restricting the development of selenium-rich agriculture. Therefore,this article,in combination with recent research findings,elucidates the detection methods of cadmium and selenium in selenium-rich agricultural products,the interaction between selenium and cadmium accumulation in selenium-rich agricultural products,the associated mechanism of selenium-cadmium interaction and the inhibition mechanism of selenium on cadmium heavy metal. This review provided a reference for further study on the mutual interaction between selenium and cadmium and established a scientific basis for investigating techniques to enrich selenium and reduce cadmium in agricultural products.
