中文摘要: 近年来,生物活性肽由于其潜在的健康价值而获得了极大的关注。酶解法因易控制、重复性好、成本低、能耗低等优点,被广泛用于工业化制备生物活性肽。该文重点综述预处理技术(化学法、酶法、物理法)在酶解法制备活性肽过程中的效果及其机理,从活性肽分子量和氨基酸序列两方面综述具有不同生物活性功能的肽段的结构特征,并介绍酶解产物纯化和鉴定的一般步骤、肽活性的评价方法等。最后,提出当前酶解法制备生物活性肽存在的问题及未来发展趋势,以期为酶解法制备生物活性肽的进一步开发利用提供参考。
Abstract:In recent years,bioactive peptides have garnered much attention due to their potential health benefits.Enzymatic methods characterized by simple control,high reproducibility,cost-effectiveness,and low energy consumption have been widely employed for the industrial preparation of bioactive peptides.This paper introduced the performance and mechanisms of pretreatment (chemical,enzymatic,or physical)technologies in the enzymatic preparation of active peptides.Additionally,the structural features of the peptides with diverse bioactive functions were expounded from molecular weights and amino acid sequences.Furthermore,the general purification and identification steps for enzymatic products and the methods for evaluating peptide activity were summarized.Finally,the current challenges and future development trends in the enzymatic hydrolysis-based preparation of bioactive peptides were outlined,with a view to providing insights for the development and utilization of bioactive peptides.
