中文摘要: 为获得发酵特性优良和性质稳定的香肠发酵菌种,以低温风干发酵羊腿为试验材料,采用溶钙圈法分离、筛选发酵特性良好的菌株,并对菌株产酸能力以及在不同条件下的生存能力进行复筛,根据形态学和生理生化特征结合16S rDNA 序列分析进行鉴定。结果表明,从低温风干发酵羊腿中分离纯化得到43 株乳酸菌,其中GM09、GM23、GM28、PA15 和KN02 5 株乳酸菌发酵特性好,具有良好的产酸能力、发酵和生长特性。经生理生化及分子生物学鉴定GM09、PA15 为戊糖乳杆菌(Lactobacillus pentosus),GM23、GM28、KN02 为植物乳杆菌(Lactobacillus plantarum)。

Abstract:The strains with good fermentation characteristics and stable properties were isolated and screened from the air-dried sheep legs fermented at low temperature by the calcium-dissolving circle method.The strains preliminarily screened out were rescreened based on the acid production and survival under different conditions.The strains were identified according to morphological,physiological,and biochemical characteristics and 16S rDNA sequence analysis.The results showed that 43 strains of lactic acid bacteria were isolated from lowtemperature air -dried fermented sheep legs.Among them,five strains,GM09,GM23,GM28,PA15,and KN02,had excellent fermentation characteristics,high acid production,and good growth performance.GM09 and PA15 were identified as Lactobacillus pentosus,and GM23,GM28,and KN02 as L.plantarum.
