中文摘要: 胞外多糖是微生物重要代谢物之一,具有抗氧化、抗肿瘤、抗菌、抗炎、乳化、絮凝等多种生物活性。微生物胞外多糖的结构与生物活性密切相关,不同来源的多糖分子在结构和活性上存在差异。该文综述微生物胞外多糖结构与生物活性的研究进展,探讨结构与活性之间的构效关系,为微生物胞外多糖的深入研究、开发和应用提供参考。

Abstract:As a major group of microbial metabolites,exopolysaccharides have antioxidant,anti-tumor,antibacterial,anti-inflammatory,emulsifying,and flocculating activities. The structures of microbial exopolysaccharides are associated with biological activities. The structure and activity are different among the polysaccharides of different sources. The research progress in the structures and biological activities of microbial exopolysaccharides were reviewed,and the structure-activity relationship was discussed. The review will provide references for the further research,development,and application of microbial exopolysaccharides.
