中文摘要: 为系统分析不同饲养方式下多浪羊肉的食用品质差异,分别对放牧散养组和舍饲养殖组多浪羊肉中的矿物质元素、游离氨基酸及风味化合物的种类及含量进行研究,结果显示,放牧散养组多浪羊肉中的锌、铁、锰元素含量显著高于舍饲养殖组(P<0.05),而舍饲养殖组的镁元素含量、氨基酸总量和总必需氨基酸含量显著高于放牧散养组(P<0.05);在风味品质方面,放牧散养组多浪羊肉的风味化合物种类比舍饲养殖组多11 种,主要是醇类、酯类和芳香类化合物等,而舍饲养殖组多浪羊肉的风味化合物总量显著更高(P<0.05)。这表明不同饲养方式对多浪羊肉的品质有不同影响,可根据不同人群的消费需求将两种饲养方式充分结合,以生产出满足消费者需求的兼具营养品质和感官品质的优质多浪羊肉。
Abstract:To systematically analyze the differences in the edible quality of Duolang sheep meat under different feeding systems,the mineral elements,free amino acids and flavor compounds in Duolang sheep meat under pasture and concentrate feeding systems were studied separately. The results showed that the contents of mineral elements Zn,Fe and Mn in the pasture feeding group were higher than those in the concentrate feeding group(P<0.05),while the content of Mg,the total content of free amino acids,and the content of essential amino acids in the concentrate feeding group were all higher than those in the pasture feeding group(P<0.05). In terms of flavor,there were 11 more flavor compound species in the pasture feeding group than in the concentrate feeding group,which were mainly alcohols,esters and aromatic compounds,while the total amount of flavor compounds in the concentrate feeding group was higher(P<0.05). In general,different feeding systems have different effects on the edible quality of Duolang sheep meat. The two feeding systems can be fully combined according to the consumption needs of different groups of people to produce high-quality Duolang sheep meat that meets the dual needs of consumers for nutritional quality and sensory quality.
