水锦树蜜品质特性及抗氧化活性分析

中文摘要: 为探讨水锦树蜜的品质特性,对其理化指标、元素成分及抗氧化活性进行测定。研究结果表明,水锦树蜜理化指标符合GB 14963—2011《食品安全国家标准蜂蜜》的要求,重金属元素含量符合GB 14963—2011 规定的限量要求或者未检测到。采用比色法,水锦树蜜总黄酮含量和总酚含量分别为(10.38±0.41)mg/100 g 和(33.10±0.57)mg/100 g,且具有DPPH 自由基清除能力,IC50 值为(2.97±0.36)mg/mL。与百花蜜相比,水锦树蜜颜色更深,并呈现出总酚和总黄酮含量高、抗氧化活性强的优势。
Abstract:In order to explore the characteristics related to the quality of honey from Wendlandia uvariifolia Hance,its physicochemical parameters,element composition,and antioxidant activity were investigated.The results showed that the physicochemical parameters of W.uvariifolia honey were in line with those of National food safety standard Honey:GB 14963—2011,and the contents of heavy metal elements were either within the requirements of GB 14963—2011 or not detected.Using colorimetric methods,the total flavonoid content and total phenolic content in W.uvariifolia honey were found to be(10.38±0.41)mg/100 g and(33.10±0.57)mg/100 g,respectively.Notably,W.uvariifolia honey had DPPH free radical scavenging ability,and its IC50 value was(2.97±0.36)mg/mL.Compared to multifloral honey,W.uvariifolia honey had a darker color,higher total phenolic and flavonoid content,as well as stronger antioxidant activity.
