中文摘要: 为研究天然虾青素对超氧阴离子的抗氧化作用,该研究对邻苯三酚自氧化法进行适当改进,在原有方法的基础上引入无水乙醇溶解虾青素,通过分析邻苯三酚自氧化产物在325 nm 附近的吸收变化评价虾青素的抗氧化活性,并与典型的抗氧化剂β-胡萝卜素、维生素C 和α-生育酚进行超氧阴离子清除能力的比较。结果表明,虾青素的超氧阴离子清除能力与维生素C 相近,明显高于β-胡萝卜素和α-生育酚。
Abstract:To study the antioxidant effect of natural astaxanthin on superoxide anion,the conventional pyrogallol autoxidation method was appropriately modified in this study.Specifically,ethanol was introduced to dissolve astaxanthin on the basis of the original method,and the antioxidant activity of astaxanthin was evaluated by analysis of the absorption changes of pyrogallol autoxidation products near 325 nm.The superoxide anion scavenging ability of astaxanthin was compared with that of typical antioxidants β-carotene,vitamin C and α-tocopherol.The results showed that the superoxide anion scavenging ability of astaxanthin was close to that of vitamin C while apparen higher than that of β-carotene and α-tocopherol.
