中文摘要: 为研究热风干燥条件对甘蓝粉的持水力、持油力及抗氧化活性的影响,以新鲜甘蓝为原料,对不同干燥温度下获得的甘蓝粉的水分含量、持水力、持油力、叶绿素、总酚、黄酮和抗坏血酸含量进行检测,并研究样品的抗氧化活性。结果表明:在干燥温度为50、55、60、65、70 ℃下,甘蓝粉干燥至水分含量为8.00%以下所需时间分别为24、22、19、17、16 h;干燥温度从50 ℃升高到70 ℃,甘蓝粉的持水力、持油力、叶绿素、抗坏血酸含量呈现下降的趋势;干燥温度为55 ℃时,总酚和黄酮含量最高,分别为1 009.68、208.87 mg/L,抗氧化能力最强,其中DPPH 自由基清除率为57.39%,羟自由基清除率为77.56%,总还原能力为0.958。综合各项指标,热风干燥温度为55 ℃时,可以较好地保持甘蓝的持水力、持油力和抗氧化活性。
Abstract:The purpose of the study was to clarify the effect of hot air drying conditions on the water-holding capacity,oil-holding capacity,and antioxidant activity of cabbage. To be specific,fresh cabbage was used as raw material,and the moisture content,water-holding capacity,oil-holding capacity,and content of chlorophyll,total phenols,flavonoids,and ascorbic acid of cabbage powder obtained by hot air drying at different temperatures were measured. The results showed that the time required to dry cabbage powder to moisture content below 8.00% at drying temperatures of 50,55,60,65 ℃and 70 ℃were 24,22,19,17 h and 16 h,respectively.When the temperature increased from 50 ℃to 70 ℃,the water-holding capacity,oil-holding capacity,and content of chlorophyll and ascorbic acid in the yielded cabbage powder showed a decreasing trend.In the instance of drying at 55 ℃,the content of total phenols and flavonoids(1 009.68 mg/L and 208.87 mg/L,respectively)and the antioxidant capacity was the strongest(DPPH-scavenging rate:57.39%;hydroxyl radical-scavenging rate:77.56%;total reducing power:0.958).In conclusion,the cabbage dried at 55 ℃had satisfactory water-holding and oil-holding capacity and antioxidant activity.
