采后晾晒及碱液处理对黄精质量和抗氧化活性的影响

中文摘要: 以多花黄精为试材,比较碱液处理及晾晒不同时间(0、3、6、9 d)对黄精质量及抗氧化和抗糖基化活性的影响。主要测定黄精呼吸速率、薯蓣皂苷元、醇浸出物、多糖、黄酮、多酚含量,对黄精提取物进行体外抗氧化活性评价,并测定其对体外糖基化终产物(advanced glycation end-products,AGEs)形成的抑制能力。结果表明,黄精水提物抗氧化和抗糖基化能力显著强于醇提物。采后晾晒导致黄精醇浸出物含量、黄酮、多酚含量下降,多糖含量下降但效果不显著,晾晒9 d后多糖、醇浸出物含量下降了14.4%,醇提物黄酮含量下降了64.6%,多酚含量下降了36.4%,水提物黄酮含量下降了17.1%,多酚含量下降了27.2%,伴随着其提取物抗氧化及抗糖基化能力的下降。碱液处理操作简便,根须脱除效果好且对黄精质量无显著影响,具有应用价值。

Abstract:Polygonatum cyrtonema Hua was used as the test material,and the effects of alkali treatment and post-harvest air-drying (0,3,6 d and 9 d)on the quality,antioxidant,and antiglycation activities of Polygonatum sibiricum were compared.The respiration rate,diosgenin,alcohol extract,polysaccharide,flavonoids,and polyphenol contents of Polygonatum sibiricum were determined,and the antioxidant activity and inhibition of advanced glycation end-products (AGEs)formation in vitro of the extract were determined.The results show that the antioxidant and antiglycation abilities of the aqueous extract were significantly greater than those of the alcohol extract.The flavonoid and polyphenol contents of the alcohol extract were decreased by post-harvest air-drying,and the polysaccharide content decreased,although the effect was not significant.After 9 d of postharvest air-drying,the polysaccharide content in the alcohol extract was decreased by 14.4%,the content of flavonoids in the alcohol extract was decreased by 64.6%,and polyphenols were decreased by 36.4%,while the content of flavonoids in the water extract was decreased by 17.1%and polyphenols were decreased by 27.2%,with lower antioxidant and antiglycation abilities of the alcohol extract and water extract.As alkali treatment is simple and has no significant effect on the quality and functional activity of Polygonatum sibiricum,its application has value.
