中文摘要: 研究不同生长期采收的青稞麦仁有效成分的变化,确定适宜的采收期。试验以1107814、甘垦5号(GK5)、甘垦6号(GK6)、甘青4号(GQ4)4个青稞品种(系)为研究对象,取样测定不同生长期蛋白质、淀粉、可溶性糖、β-葡聚糖含量及青麦仁酶活力,结果表明,营养成分因青麦仁品种的不同而呈现出不完全相同的变化趋势;开花后20 d,GK5蛋白质含量最高,达18.8%;随着青稞生长时间的延长,青麦仁中可溶性糖含量和过氧化氢酶活力呈下降的趋势;淀粉、β-葡聚糖含量以及过氧化物酶活力逐渐升高。采用主成分分析法对6项品质指标进行综合分析,结果表明,GK6开花后30 d的青麦仁品质最佳,较适合青麦仁产品研发。
Abstract:To explore the changes in the effective components of green barley kernels collected during different growth periods,the protein,starch,soluble sugar,β-glucan,and enzyme activity of green barley kernels were detected by sampling four barley varieties (lines),1107814,GK5,GK6,and GQ4.The result show that the nutritional components followed different trends according to the different varieties of barley.The protein content of GK5 reached 18.8%20 days after flowering.The soluble sugar content and catalase activity in green wheat kernels decreased constantly with increased growing time,while the starch contents,β-glucan,and peroxidase activity increased gradually.Principal component analysis was used to comprehensively analyze quality indexes.The results show that the quality of green GK6 wheat kernels was the best 30 days after flowering,and these are suitable for the development of green wheat kernel products.
