体外模拟消化对紫薯桑葚复合口服液抗氧化成分及其活性影响

中文摘要: 以紫薯和桑葚为主要原料,制备一款紫薯桑葚复合口服液,采用体外模拟胃肠消化法检测活性物质的释放规律及抗氧化活性变化。结果表明,紫薯提取液与桑葚汁以质量比4∶3复合后,按紫薯提取液与桑葚汁复合添加量95.98%、白砂糖添加量4%、柠檬酸添加量0.02%研发产品,感官评价最高分83.42。紫薯桑葚复合口服液胃消化阶段,黄酮含量、花色苷含量、抗氧化能力均显著提高(p<0.05);肠消化阶段,总酚含量上升4.06%、黄酮含量下降8.34%、花色苷含量下降22.18%,抗氧化能力显著提高(p<0.05)。由相关性分析可知,胃消化阶段抗氧化能力与黄酮和花色苷含量呈正相关,肠消化阶段抗氧化能力与总酚含量呈显著正相关(p<0.05)。综上所述,模拟胃肠消化有利于紫薯桑葚复合口服液中活性物质释放,且消化产物具有较好的抗氧化活性。
Abstract:A compound oral liquid was prepared with purple sweet potato and mulberry as the main raw materials,and the release law of active substances and the changes in antioxidant activity were detected by the method of in vitro simulated gastric and intestinal digestion.The results showed that in the context of the mass ratio of purple potato extract to mulberry juice of 4∶3,the highest sensory evaluation score was 83.42 under the following conditions:95.98% purple potato extract and mulberry juice,4% white granulated sugar,and 0.02% citric acid.In the gastric digestion of the compound oral liquid,the content of flavonoids and anthocyanins and antioxidant capacity were significantly improved(p<0.05).In intestinal digestion,the total phenol content increased by 4.06%,the flavonoid content decreased by 8.34%,and the anthocyanin content decreased by 22.18%.Moreover,the antioxidant capacity was significantly improved(p<0.05).Correlation analysis showed that in gastric digestion,the antioxidant capacity was positively correlated with the content of flavonoids and anthocyanins,and in intestinal digestion,the antioxidant capacity was significantly positively correlated with the content of total phenols(p<0.05).In conclusion,simulated gastric and intestinal digestion was conducive to the release of active substances in the compound oral liquid,and the digestive products possessed good antioxidant activity.
