纤维素酶法提取油莎豆多糖及其抗氧化性

中文摘要: 以油莎豆为原料,采用纤维素酶法提取油莎豆多糖。利用单因素试验及响应面试验对酶解时间、酶解温度、加酶量和pH值进行优化,并考察油莎豆多糖的抗氧化性,结果显示酶法提取油莎豆多糖的最佳工艺参数:酶解时间34min、酶解温度61℃、加酶量1.7%、pH4.55,此条件下多糖得率为15.86%。油莎豆多糖具有较好的抗氧化性能,其DPPH自由基和羟自由基清除率分别达到60.54%、72.82%。
Abstract:The polysaccharide from Cyperus esculentus was extracted by cellulase.The single factor tests and response surface methodology were employed to optimize the extraction conditions including enzymolysis time,enzymolysis temperature,enzyme dosage,and pH value.Furthermore,the antioxidant activity of the polysaccharide was determined.The results showed that the optimal parameters for the extraction of polysaccharide from C.esculentus were enzymolysis with 1.7% cellulase at 61℃ and pH4.55 for 34 min.Under these conditions,the yield of polysaccharide was 15.86%.The polysaccharide from C.esculentus had good antioxidant activity,with the DPPH radical and hydroxyl radical scavenging rates of 60.54% and 72.82%,respectively.
