中文摘要: 马铃薯在我国种植广泛,富含多糖、生物碱、蛋白质、多酚等多种活性成分,但一直以来都作为食物进行消费,其保健功能未得到真正开发。该文对近年来马铃薯活性成分的提取方法以及生理功能进行综述,为马铃薯的深度开发提供参考,并提高人们对马铃薯的科学认知与消费。
Abstract:Widely planted in China,potato is rich in polysaccharides,alkaloids,proteins,polyphenol,and other active components.However,since potato has always been consumed as food,its health-care function has been under exploited.This paper reviewed the extraction methods of active components of potato and its physiological function to provide references for the in-depth development of potato and improve the scientific knowledge and consumption of potato.
