中文摘要: 该文利用果胶酶-纤维素酶复合酶对余甘子汁进行二次榨汁,进一步提高余甘子的出汁率。以出汁率、可溶性固形物含量、总酸含量为指标,通过单因素和响应面试验优化余甘子汁复合酶解最佳工艺条件。结果显示,果胶酶-纤维素酶复合酶酶解余甘子汁的最佳工艺参数为果胶酶-纤维素酶质量比1.1∶1、复合酶添加量0.01%、酶解时间2.9 h、酶解温度55℃,该工艺条件下出汁率为(88.81±0.20)%、可溶性固形物含量为(14.57±0.06)%、总酸含量为(29.28±0.15)g/L。应用复合酶对余甘子汁进行二次榨汁,能有效提高余甘子汁的二次榨汁出汁率。
Abstract:To further improve the yield of Phyllanthus emblica L.juice,this study used pectinase-cellulase compound enzymes to make secondary extraction of P.emblica L.juice.The optimum process conditions for the compound enzymatic hydrolysis of P.emblica L.juice were optimized by single-factor and response surface experiments,with juice yield,soluble solids content and total acid content as indicators.The results showed that the optimum process parameters for the compound enzymatic hydrolysis of P.emblica L.juice were 1.1∶1 of pectinase-cellulase ratio,0.01%enzymatic addition,and 2.9 h of enzymatic hydrolysis time at 55℃.Under these conditions,the juice yield was(88.81±0.20)%,the soluble solids content was(14.57±0.06)%,and the total acid content was(29.28±0.15) g/L.The application of compound enzymes for the secondary extraction of P.emblica L.juice effectively improves the juice yield of the secondary extraction of P.emblica L.juice.
