中文摘要: 蜂花粉是一种良好的膳食补充剂。由于蜂花粉来源于植物花粉,易产生致敏风险。蜂花粉的致敏问题成为影响蜂花粉食用安全与深加工利用的共性难题。目前,对于其致敏机制的研究十分有限。该文对近年来国内外关于蜂花粉的致敏案例、过敏原分离鉴定、致敏机制评价,以及改善致敏性的加工控制技术相关研究进展进行综述,同时对未来蜂花粉过敏的研究方向进行展望,旨在为蜂花粉的安全生产和开发利用提供参考。

Abstract:Bee pollen is a dietary supplement.However,the allergenicity of bee pollen with botanical origin becomes a common challenge to the safety,processing,and utilization of bee pollen.A number of clinical allergy cases caused by the consumption of bee pollen or its formulations have been reported,while little is known about the allergenic mechanism.Thus,the studies about bee pollen allergy,allergen isolation and identification,evaluation of allergenic mechanisms,and allergen elimination techniques were reviewed.Additionally,this paper prospected the future research orientation of bee pollen allergy,aiming to provide a foundation for the safe production,development,and utilization of bee pollen.
