中文摘要: 为探究春季不同时期瓮安县主栽茶树品种绿茶品质化学成分,选择春季4个时期一芽二叶茶树新梢制成绿茶样品,检测样品的多酚类物质含量、咖啡碱含量、游离氨基酸总量、儿茶素总量、可溶性糖含量、水浸出物含量。结果表明:黄金芽的可溶性糖含量随采摘时间呈下降趋势,且在春季各个时期高于其余品种,含量在(3.59±0.13)% ~(4.83±0.08)% ;白叶一号的游离氨基酸总量呈先增加后降低趋势,在3月16日最高,为(8.31±0.22)% ,且显著高于其余品种;福鼎大白的茶多酚含量、咖啡碱含量、儿茶素总量整体在春季高于其余两个品种,其含量分别为(18.25±0.51)% ~(20.17±1.19)% 、(3.76±0.08)% ~(4.55±0.11)% 、(14.96±0.31)% ~(16.02±0.23)% ;白叶一号、黄金芽与福鼎大白相比,具有游离氨基酸总量高,茶多酚含量低的特点;3个茶树品种水浸出物含量较高,为(40.08±0.97)% ~(45.22±1.60)% ;3个品种的酚氨比值在(1.99±0.06)~(5.00±0.20),均小于8。综上所述,瓮安县3个主栽茶树品种制作的绿茶水浸出物含量高,游离氨基酸总量较高,酚氨比值较低,所制绿茶品质优良。
Abstract:The quality of Huangjinya and Baiye No.1,the main tea varieties introduced in Weng’an county,Guizhou Province,was examined.Taking Fuding Dabai in the same area as the control,green tea samples were prepared from the new shoots of one-bud two-leaf plants during different periods in spring.The polyphenol,caffeine,total free amino acid,total catechin,and soluble sugar contents of the water extracts were then determined.According to the results,the soluble sugar content of golden bud was higher than that of the other two varieties in spring,ranging from (3.59±0.13)% to (4.83±0.08)% .The total amount of free amino acids in Baiye No.1 increased at first and then decreased,reaching a maximum of(8.31±0.22)% on 16 March 2022,which was significantly higher than that of the other varieties.The total polyphenol,caffeine,and catechin contents of Fuding Dabai were(18.25±0.51)% ~(20.17±1.19)% ,(3.76±0.08)% ~(4.55±0.11)% ,and (14.96±0.31)% ~(16.02±0.23)% ,respectively,being higher than those of the other two varieties.The three tea cultivars had a high content of the water extract ranged from(40.08±0.97)% to(45.22±1.60)% .Overall,compared with Fuding Dabai,Baiye No.1 and Huangjinya had higher contents of total free amino acids and lower amounts of tea polyphenols.The phenol-to-ammonia ratios of the three varieties ranged from(1.99±0.06)to(5.00±0.20),all less than 8.In summary,the water extracts of green teas produced from the three main imported tea varieties in Weng'an county have high total free amino acid and low phenol-to-ammonia ratios,verifying them to be of excellent quality.
