中文摘要: 以油莎豆粕为原料,采用超声波辅助法提取水溶性多糖,通过单因素试验与正交试验确定最佳提取工艺,并对多糖结构和抗氧化性进行研究。结果表明,油莎豆粕水溶性多糖最佳提取工艺条件为料液比1∶30(g/mL),超声时间6 min,超声功率450 W。在此工艺条件下,油莎豆粕水溶性多糖提取率为30.49% 。红外光谱表明,提取的油莎豆粕水溶性多糖呈现出典型的以α-吡喃糖为骨架的多糖特征吸收峰。抗氧化性结果显示,多糖浓度为6 mg/mL时,DPPH自由基和超氧阴离子自由基清除率分别为98.7% 、96.8% ;多糖浓度为1.5 mg/mL时,羟自由基清除率为98.0% 。
Abstract:The water-soluble polysaccharides were extracted from Cyperus esculentus meals by the ultrasonicassisted method.The optimal extraction process was determined by the single factor experiment and orthogonal test,and the structure and antioxidant activity of polysaccharides were investigated.The results showed that the optimal extraction process conditions for water-soluble polysaccharides from C.esculentus meals were as follows:solid-liquid ratio of 1∶30(g/mL),ultrasonic time of 6 min,and ultrasonic power of 450 W.Under the above process conditions,the extraction rate of water-soluble polysaccharides from C.esculentus meals was 30.49% .Infrared spectra indicated that the extracted polysaccharides exhibited typical absorption peaks of α-pyranose as the backbone.The results of the antioxidant experiment showed that when the concentration of polysaccharides was 6 mg/mL,the scavenging rates against DPPH free radicals and superoxide anion radicals were 98.7% and 96.8% ,respectively.When the concentration of polysaccharides was 1.5 mg/mL,the scavenging rate against hydroxyl radicals was 98.0% .
