中文摘要: 雌马酚(equol,Eq)是大豆异黄酮的代谢产物之一,具有较高生物活性和稳定化学结构,其生物活性远远高于大豆异黄酮,且易被人体肠道吸收利用。然而目前仅有30%~60%的人群可以通过自身代谢产生雌马酚,而其他一部分人群则需外源物质的补充来满足其对雌马酚的需求。因此,如何高效、快速地制备并检测雌马酚已经成为食品、生物和医药等多个领域的研究热点。该文对雌马酚的制备、检测以及发酵富集技术等方面的研究进行总结,旨在为雌马酚在食品领域的进一步开发研究提供一定的参考。

Abstract:Equol(Eq),one of the metabolites of soybean isoflavones,has high biological activity and stable chemical structure.Its biological activity is much higher than that of soybean isoflavones,and it is easy to be absorbed and utilized by human intestinal tract.However,only 30%-60% of people can produce equol through their own metabolism,while others need to supplement exogenous substances to meet the body's demand for equol.Therefore,how to efficiently prepare and detect equol has become a research hotspot in food,biology,medicine and other fields.This paper reviews the studies about the preparation,detection and enrichment of equol,aiming to provide some reference for the further development of equol in the food field.
