中文摘要: 我国是世界上马铃薯生产第一大国,马铃薯皮渣是马铃薯加工的废弃物,含有较多的生物活性成分,高效开发和利用马铃薯皮渣资源,提高其附加值是当前的研究热点。该文对马铃薯皮渣的主要成分及膳食纤维、果胶、生物碱、蛋白质和多酚的提取、食品原料的开发、饲料的加工、生物能源的制备、环保材料的开发等综合利用现状进行简要综述,并对马铃薯皮渣的开发利用前景进行了展望,可为马铃薯皮渣综合利用提供参考。
Abstract:China is a major producer of potatoes.Potato peel residue,the waste produced during potato processing,contains abundant bioactive components.Therefore,it is a research focus at the moment to develop and utilize potato peel residue for a higher added value.This article reviewed the extraction of dietary fiber,pectin,alkaloids,protein,polyphenol,and other bioactive components in potato peel residue,and the development for food raw material,feed,bioenergy,and environment friendly materials.Moreover,the potentials of potato peel residue were summarized.This study is expected to provide a reference for the comprehensive utilization of potato peel residue.
