Abstract:China is a major producer of potatoes.Potato peel residue，the waste produced during potato processing，contains abundant bioactive components.Therefore，it is a research focus at the moment to develop and utilize potato peel residue for a higher added value.This article reviewed the extraction of dietary fiber，pectin，alkaloids，protein，polyphenol，and other bioactive components in potato peel residue，and the development for food raw material，feed，bioenergy，and environment friendly materials.Moreover，the potentials of potato peel residue were summarized.This study is expected to provide a reference for the comprehensive utilization of potato peel residue.
