中文摘要: 为提高玫瑰茄花萼色素产品的附加值,促进玫瑰茄在食品添加剂方面的利用,该文从大孔树脂纯化玫瑰茄花色苷过程中分离回收有机酸,并对其性质进行研究。利用超声辅助提取法提取玫瑰茄花色苷,在AB-8大孔树脂纯化花色苷的过程中采用阴离子-阳离子交换柱联合法回收有机酸流出液,并测定树脂吸附效能。经扫描电镜观察有机酸粉末发现,样品大多数呈球形,但仍有少部分呈不规则形状。通过DPPH法、ABTS法和水杨酸法测定玫瑰茄有机酸对DPPH自由基、ABTS+自由基、羟基自由基的清除能力,清除率分别达到96.24%、99.23%和95.77%。
Abstract:In order to increase the added value of roselle sepal products and to facilitate the use of roselle as a food additive,organic acids are separated and obtained from macroporous resins in the purification process of roselle anthocyanins,and their properties were studied.The anthocyanin of roselle was extracted by ultrasonic assisted extraction.In the process of purifying anthocyanin with AB-8 macroporous resin,the organic acid effluent was recovered by anion cation exchange column,and the adsorption efficiency of the resin was determined.The scanning electron microscope observation of organic acid powder showed that most of the products were spherical,but a few were irregular.The scavenging ability of roselle organic acid to DPPH radical,ABTS+radical and hydroxyl radical was determined by DPPH method,ABTS+method and salicylic acid method.The scavenging rates were 96.24%,99.23% and 95.77% respectively.
