中文摘要: 果蔬组织的光学特性与组织内部的化学成分和物理结构关系密切,可用来分析果蔬品质。为保证食品质量安全和消费者健康,多种光学技术被用于果蔬组织光学特性测量和品质无损检测。该文系统阐述时间分辨、频域、空间分辨、空间频域成像和积分球技术测量果蔬组织光学特性的原理和特点,对其在果蔬品质检测中的具体应用进行总结和展望,旨在为果蔬品质无损检测研究提供参考。
Abstract:The optical properties of fruit and vegetable tissues are closely related to their chemical compositions and physical structures.Thus,these optical properties can be used for fruit and vegetable quality assessments.To ensure food quality and consumer health,diverse techniques have been developed for optical property measurement and quality assessment of fruits and vegetables.The paper described the principles and characteristics of five typical optical techniques (i.e.,time resolved,frequency domain,spatial resolved,spatial-frequency domain imaging,and integrating sphere spectrophotometry)for optical property measurement of fruits and vegetables.The application of each measured optical property to quality evaluation was then summarized.Finally,perspectives regarding future use of optical property measurements for fruit and vegetable quality assessments were discussed.The review could provide references for interested researchers to gain more insights into optical property measurement and fruit and vegetable quality evaluation.
