中文摘要: 在香肠生产加工和发展历程中肠衣发挥着重要的功能,因为它不仅影响着香肠的完整性、大小和形状,还影响着香肠的食用性和风味。在当今的香肠生产加工中,除了传统的天然肠衣,还使用了不同类型的人造肠衣。该文研究概括天然肠衣和胶原蛋白、纤维素、塑料等人造肠衣的原料、功能特性及应用特点,并重点研究总结新型共挤肠衣的加工应用特性,以期为香肠加工中肠衣的选用提供理论参考。
Abstract:Casings play an important role in sausage production,processing,and development because they affect their integrity,size,shape,edibility and flavor.Today,sausage production and processing use different types of artificial casings in addition to traditional natural casings.In this article,the raw materials and functional and application characteristics of natural and artificial casings,such as collagen,cellulose,and plastic,were summarized.Additionally,the processing and application characteristics of new co-extruded casings were analyzed and presented to provide a theoretical reference for the selection of casings in sausage processing.
