中文摘要: 大米多肽具有很高的生物效价和营养价值,且具有低致敏性以及保健的功能,因此在国内外日益引起广泛关注,大米多肽的生理功能与人体内多个生理过程的调节有关,还具备预防机体衰老、增强机体抗疾病能力的作用。大米多肽产品的开发,大大提高了大米加工过程中副产物的增值效率,延伸了大米加工产业链,丰富了天然植物多肽种类,具有较强的经济、社会效益。该文总结大米多肽的最新研究成果,包括大米多肽的主要生产方法以及应用领域等,概述大米多肽在各个领域的应用价值,对其未来的发展趋势进行展望。

Abstract:Rice peptides display high biological potency and nutritional value,are hypoallergenic,and possess health promoting functions.These peptides have thus attracted widespread research and commercial interest,both at home and abroad.Rice peptidesdisplay physiological functions relevant to the regulation of multiple physiological processes in the human body,includingmitigating effects of aging and enhancing immune defenses against diseases.Commercial development of functional rice peptides has greatly increased the extractable value of by-products of rice processing,extended the rice processing industry chain,enriched the array of known bioactive plant peptides.These peptides thus display strong economic and social development potential.This article summarized the latest results of research focused on rice peptides,including primaryextraction methods,and fields of rice peptide application.This paper summarized the application value of rice polypeptides in various fields,anddiscussed prospects for future development trends.
