Abstract:Ginseng is a traditional Chinese herbal medicine.It is rich in active substances and has complex pharmacological effects,which are helpful for the prevention of human diseases.Since being approved as a new resource food in China in 2012,ginseng has been developed for many applications.The main components,extraction methods,health functions,and the application of ginseng in food were reviewed from the literature.The findings provide a reference and the basis for further development and utilization of ginseng products.
