中文摘要: 应用ε-聚赖氨酸和螯合增效剂复合控制冷鲜鲮鱼鱼糜中的致腐微生物。采用微生物学方法从市售鲮鱼鱼糜中分离鉴定了9株致腐微生物,选择其中5株优势致腐微生物菌株和3株标准菌株进行ε-聚赖氨酸增效剂筛选,根据筛选结果配制两种ε-聚赖氨酸复合生物防腐剂,并进行复合生物防腐剂对致腐微生物的抑菌效果及其对冷鲜鲮鱼糜的防腐效果研究。结果表明,乙二胺四乙酸二钠(ethylene diamine tetraacetic acid disodium salt,EDTA-2Na)、甘氨酸、L-丙氨酸、L-苹果酸对ε-聚赖氨酸抑菌效果具有较强的增效作用,复合生物防腐剂对试验菌株均表现出较好的抑制作用,使用复合生物防腐剂的鲮鱼糜中菌落总数、挥发性盐基氮含量均明显低于对照组。
Abstract:ε-polylysine and chelate were combined to control the spoilage microorganisms in aftermarket mud carp (Cirrhinus molitorella)surimi.Nine strains of spoilage microorganisms were isolated from the mud carp surimi and identified using a microbiological method.Five dominant strains and three standard strains were selected for the screening of ε-polylysine synergy.According to the screening results,two ε-polylysine complex bio-preservatives were prepared,their bacteriostatic and antiseptic effect in chilled mud carp surim were studied.The results showed that ethylene diamine tetraacetic acid disodium salt (EDTA-2Na),glycine,L-alanine,and L-malic acid had a strong synergistic effect with ε -polylysine.The complex bio-preservative showed a good inhibitory effect on the test strains.The total number of colonies and the content of volatile base nitrogen in mud carp surimi were significantly reduced by the complex bio-preservatives compared with those in the control group.
