中文摘要: 鱼类加工副产物——鱼鳞鱼皮富含胶原蛋白肽,其来源丰富、价格低廉、加工简单,是鱼源肽加工企业的首选原料。该文对鱼鳞鱼皮制备胶原蛋白肽的提取方法、分离过程、鉴定及功能方面的研究进展进行综述,并对以鱼鳞鱼皮为主要原料制备美白保湿肽的发展前景进行展望,为其进一步的高值化利用提供参考。

Abstract:As a by-product of fish processing,the fish scales and skins is rich in collagen peptide.It is the preferred raw material for fish peptide factories because of its rich source,low price and simple processing technology.In this paper,the extraction methods,separation process,identification and function of peptides from fish scales and skins were reviewed.Moreover,the development and direction of functional peptide extraction from fish scales and skins were prospected,which could provide reference for further efficient utilization of it.
