中文摘要: 为更好地研究不同品种黑木耳所含主要营养成分,以伊春地区栽培的5种黑木耳为研究对象,对所含一般营养成分、蛋白质、氨基酸、肽进行检测和分析。结果表明,5种黑木耳一般营养成分中的粗蛋白、粗脂肪、粗纤维、多糖含量最高的品种依次为野森1#、元宝、小黑王、小黑王,且相对含量分别为15.40%、1.70%、7.68%、9.27%。蛋白质方面,所含氨基酸的评价(score of ratio coefficient of amino acid,SRC)依次为野森1#、小黑王、元宝、黑山、黑丰,评价数值范围为85.37~90.13,平均值为87.94;分子量<1 000 Da的低聚肽相对分子量为67.92%~73.01%。综合分析得出,野森1#营养价值更高。
Abstract:In order to better study the main nutritional components of different varieties of Auricularia auricula,five kinds of Auricularia auricula cultivated in the Yichun area were selected for study.The general nutritional components,proteins,amino acids and peptides were identified and analyzed.Rankings for crude protein,crude fat,crude fiber,and polysaccharide contents were Yesen 1#,Yuanbao,Xiaoheiwang,and Xiaoheiwang.Relative contents were 15.40%,1.70%,7.68% and 9.27% respectively.Protein quantification by amino acid analysis(score of ratio coefficient of amino acid,SRC) yielded the following rankings:Yesen 1#,Xiaoheiwang,Yuanbao,Heishan and Heifeng.Amino acid values ranged from 85.37 to 90.13,with an average value of 87.94.The relative molecular weight range of oligopeptides with molecular weight<1 000 Da was 67.92%~73.01%.Comprehensive analyses showed that Yesen 1#had the highest nutritional value.
