中文摘要: 火麻仁为药食同源品种,含有丰富的火麻油、火麻蛋白质以及微量大麻酚类成分,具有重要的营养价值,以及抗衰老和增强免疫等生理活性。该综述对近年来火麻仁汤、火麻仁酒、火麻仁蛋白饮料、火麻仁单一饮料及火麻仁复合饮料的制备及稳定性研究进行概述,以期为火麻仁饮料的开发和综合利用提供有益参考。
Abstract:Hemp seed is contained in the medicinal food homologous variety.Rich hemp oil,hemp protein and microcrystalline cannabinol compounds are contained in hemp seed.Hemp seed is evaluated as having important nutritional value and physiological activities such as anti-aging and enhancing immunity.The preparation and stability of hemp seed soup,hemp seed wine,hemp seed protein beverage,hemp seed single beverage and hemp seed compound beverage in recent years was summarized in the review,in order to provide useful reference for the development and comprehensive utilization of hemp seed beverage.
