复合氨基酸锌、铁螯合物的制备及抗菌和抗氧化性研究

中文摘要: 通过水体系合成法由8种人体必需氨基酸制备复合氨基酸锌和复合氨基酸铁,利用试管二倍稀释法测定其对菌株 Lysinibacillus macrolides、Bacillus cereus、Bacillus subtilis、Staphylococcus aureus、Pseudomonas aeruginosa、Escherichia coli、Zygosaccharomyces rouxii、Saccharomyces cerevisiae、Aspergillus flavus、Penicillium expansum 和 Aspergillus niger的抗菌活性,进一步测定其对DPPH·、O2-·和·OH的清除率。复合氨基酸锌和复合氨基酸铁的螯合率为81.27%和68.19%。二者对供试细菌和酵母菌具有显著抗菌活性,其中,对B.subtilis、S.aureus抑制作用最显著,最小抑菌浓度均为0.313 mg/mL;对供试霉菌无显著抑制作用。二者对DPPH·、O2-·和·OH有清除能力,且随着浓度的增加而增强。2.5mg/mL复合氨基酸锌和复合氨基酸铁对DPPH·、O2-·和·OH的清除率分别为34.52%、23.93%、22.36%和30.46%、20.63%、20.05%。
Abstract:Compound amino acid zinc and iron were prepared from 8 kinds of essential amino acids by waterbased synthesis.The antimicrobial activities of two-fold test tube dilutions of Lysinibacillus macrolides,Bacillus cereus,Bacillus subtilis,Staphylococcus aureus,Pseudomonas aeruginosa,Escherichia coli,Zygosaccharomyces rouxii,Saccharomyces cerevisiae,Aspergillus flavus,Penicillium expansum,and Aspergillus niger were determined.The clearance rates of DPPH·,O2-·,and·OH were also determined.The rates of zinc and iron chelation were 81.27% and 68.19%,respectively.Both displayed significant antimicrobial activity against the tested bacteria and yeasts.The inhibition of B.subtilis and S.aureus was the most significant,with a minimum inhibitory concentration of 0.313 mg/mL.No significant inhibition of the tested molds was evident.Compound amino acid zinc and iron scavenged DPPH·,O2-·,and·OH radicals in a concentration-dependent manner.The respective clearance rates of 2.5 mg/mL compound amino acid zinc and iron were 34.52%,23.93%,and 22.36% for compound amino acid zinc and 30.46%,20.63%,20.05% for compound amino acid iron.
