中文摘要: 新型食品传递体系的开发一直是活性物质保护领域的研究热点。以环糊精和生物相容性金属离子为基础制备的环糊精金属有机骨架具有高孔隙率、高比表面积及强吸附等特点,已在活性物质封装领域表现出独特的封装能力、出众的生物相容性以及可修饰的功能化作用。环糊精金属有机骨架的开发拓宽环糊精在食品领域中的应用,同时为金属有机骨架在食品领域的应用提供新思路。该文综述关于环糊精金属有机骨架的结构特性、制备方法、在封装活性物质领域的应用及提高其稳定性的研究,最后针对目前研究中存在的问题对未来环糊金属有机骨架的研究方向提出建议。
Abstract:In the exploration of novel food delivery systems,protection of the active components has always been the focus. Cyclodextrin-based metal-organic frameworks (CD-MOFs)have high porosity and high specific surface areas,similar to traditional metal organic frameworks.CD-MOFs exhibit unique encapsulation ability,outstanding biocompatibility, and modifiable functionalization for the encapsulation of active components. This article introduced the structural characteristics, preparation methods, and application status of CD-MOFs. In view of the existing problems in current research,suggestions for the future direction of studies on cyclodextrin metal organic frameworks were proposed.
