中文摘要: 茶树芽叶一般呈黄绿色、绿色、墨绿色等,但也有紫色的芽叶。这是因为茶树叶片中色素具有不同的呈色效果。茶树芽叶颜色深浅主要与花青素含量高低呈明显的正相关性。传统茶叶加工理论认为,使用富含花青素的紫色芽叶制茶品质较差,但近年来研究表明,紫芽叶所制成的绿茶、红茶、普洱茶均具有明显区别于绿芽芽叶茶的品质特征,并且紫芽叶茶具有很强的抗氧化活性,在清除自由基、降压等方面的具有一定的保健功效。因此富含花青素的紫芽叶茶显现出巨大的科研价值和经济开发价值,受到国内外科研工作者和消费者的青睐,紫芽叶茶树品种的培育以及紫芽叶茶产品的开发成为当下热点。该文综述紫芽叶茶花青素种类、形成影响因素、保健功能及产品开发研究进展,以期为紫芽叶茶的综合利用提供一定参考依据。
Abstract:Although tea leaves are predominantly yellow-green,green,dark green,and so on,purple leaf tea cultivars are also known to exist in nature.The variety in the color of tea leaves is due to the presence of pigments such as anthocyanin.A significant positive correlation was found between tea color and anthocyanin content.According to traditional knowledge,the quality of tea made from anthocyanin-rich purple bud leaves is poor.However,recent research has shown that Pu'er tea made from purple bud leaves possesses characteristics of high quality tea,such as green tea,black tea and Pu'er tea.Although their characteristics differ from those of green bud leaves,purple bud leaves have high antioxidant activity and confer certain health benefits,including free radical removal and blood pressure reduction.Therefore,anthocyanin-rich purple bud leaf tea is considered to be highly valuable for scientific research and economic development.Its favorability among researchers and consumers worldwide has led to the popularization of the cultivation of purple bud leaf tea varieties and the development of purple bud leaf tea products.In this study,purple bud leaf tea was reviewed on aspects including anthocyanin types,influencing factors,health benefits,and product development to provide reference for its comprehensive utilization.
